Perishable agricultural products are broadly categorized into three distinct primary value chains:

  1. Roots & Tubers: Rich carbohydrate reserves stored in subterranean plant organs, such as yam, cassava, cocoyam, and potato.
  2. Fruits & Vegetables: Essential sources of dietary fiber, vitamins, and minerals. Examples include oranges, mangoes, plantain, pawpaw, pineapple, tomato, okra, pepper, and leafy greens.
  3. Livestock & Fisheries: High-value, highly unstable animal proteins encompassing meats and capture/aquaculture fishery products.
