Perishable root and tuber crops require clear maturity indicators and gentle harvesting techniques to prevent skin damage and extend shelf life. Harvesting should occur when the soil is moist and soft; digging into hard, dry soil leads to severe bruising, cuts, and broken tubers.

Use the following criteria as a guide in determining the maturity and harvesting stage of the respective crops:

  • Yam: Age of crop, size of tuber, or browning/drying of vines.
  • Potato / Cocoyam / Turmeric / Ginger / Carrot: Drying of foliage and complete vine senescence.

Ensure that enough space is provided around the crop while digging to prevent tools from inflicting structural damage.
